INGREDIENTS

  • 500G PODDED BROAD BEANS (FROZEN IF OUT OF SEASON)
  • 100ML CRÈME FRAICHE
  • OLIVE OIL
  • HALF A LEMON
  • HANDFUL OF CHOPPED FRESH MINT LEAVES
  • PINCH OF SEA SALT
  • BLACK PEPPER
  • TO SERVE (ITALIAN CROSTINI BREAD)

HOW TO MAKE A BROAD BEAN DIP & CROSTINI

  1. COOK THE BEANS IN SLIGHTLY SALTED BOILING WATER FOR 3-5 MINUTES UNTIL TENDER (TO KEEP THE LOVELY RICH GREEN COLOUR, YOU CAN DRAIN THE BEANS AND POUR THEM INTO A BOWL OF ICE WATER).
  2. ADD THE DRAINED BEANS, CRÈME FRAICHE, A DRIZZLE OF OLIVE OIL, MINT & SEASONING INTO A FOOD PROCESSOR. SQUEEZE OVER THE LEMON JUICE.  BLITZ UNTIL COMBINED.
  3. FINISH WITH A SCATTERING OF FRESH MINT LEAVES AND A CRACK OF BLACK PEPPER.
  4. SERVE WITH SLICED ITALIAN CROSTINI OR BREAD STICKS AND AN AMALFI SUNSET SPRITZ.
