SUPER-FAST NIBBLES FOR FRIENDS
Vibrant green broad beans mixed with fresh mint, zesty lemon and creamy crème fraiche. With an Amalfi Sunset Spritz in one hand…just dip while you sip!
INGREDIENTS
- 500G PODDED BROAD BEANS (FROZEN IF OUT OF SEASON)
- 100ML CRÈME FRAICHE
- OLIVE OIL
- HALF A LEMON
- HANDFUL OF CHOPPED FRESH MINT LEAVES
- PINCH OF SEA SALT
- BLACK PEPPER
- TO SERVE (ITALIAN CROSTINI BREAD)
HOW TO MAKE A BROAD BEAN DIP & CROSTINI
- COOK THE BEANS IN SLIGHTLY SALTED BOILING WATER FOR 3-5 MINUTES UNTIL TENDER (TO KEEP THE LOVELY RICH GREEN COLOUR, YOU CAN DRAIN THE BEANS AND POUR THEM INTO A BOWL OF ICE WATER).
- ADD THE DRAINED BEANS, CRÈME FRAICHE, A DRIZZLE OF OLIVE OIL, MINT & SEASONING INTO A FOOD PROCESSOR. SQUEEZE OVER THE LEMON JUICE. BLITZ UNTIL COMBINED.
- FINISH WITH A SCATTERING OF FRESH MINT LEAVES AND A CRACK OF BLACK PEPPER.
- SERVE WITH SLICED ITALIAN CROSTINI OR BREAD STICKS AND AN AMALFI SUNSET SPRITZ.
